- I make these stuffed peppers all the time, and they are even better the next day! If you’d like to make them with meat, simply swap the kidney beans for ground beef, turkey, or chicken.
What you’ll need;
-organic red kidney beans, rinsed
-tomato basil sauce
-gluten free or regular bread crumbs
-Set oven to 400 degrees, and bake your pitted bell peppers while doing the next step. You can also cook your brown rice at this time
-Sauté chopped zucchini, bell peppers caps, mushrooms and spinach in a pan until tender. Add in your rice, red kidney beans and tomato basil sauce. (if it’s not your own sauce, Muir Glen Organic and Newman’s Own Organic both taste great!)
-Fill each pepper with your stuffing, and top with a little more sauce, a sprinkle of gluten free bread crumbs and Parmesan cheese.
